Ingredients

  • 6 egg yolks
  • 75g caster sugar
  • 500g mascarpone
  • 300ml strong espresso
  • 3 tbsp coffee liqueur
  • 2 packs ladyfinger biscuits
  • Unsweetened cocoa powder

Instructions

1 Whisk egg yolks and sugar until pale and thick.
2 Add mascarpone and mix until smooth.
3 Combine cold espresso with coffee liqueur.
4 Quickly dip each ladyfinger in coffee mixture and arrange in dish.
5 Spread half the mascarpone mixture over ladyfingers.
6 Repeat layers.
7 Refrigerate for at least 3 hours.
8 Dust with cocoa powder before serving.
